Everyone is doing something clever these days with their blog! Jen does Things I love Thursday. I figured why not try this concept. For weeks I've been trying to come up with something clever. I was going to do actor/actress of the week but ditched that idea when I realized I really don't have time to do that because it might require too much TV! Some other ideas came and went and tonight I made something tasty for dinner so I decided on this.
Meal of the Week Monday begins...now!
New Orleans Rice and Sausage
(from the cookbook Quick and Easy p. 64: give credit where credit is due, this is not my own recipe but suggestions of mine will be in green! Why I like the recipe will appear in blue below the recipe!)
Cook Time: 15 Min
Method: Stovetop Skillet or Electric Skillet (I've done both!)
1/2 lb smoked sausage, sliced (substitute kielbasa)
1 can stewed tomatoes, cajun or Italian style (substitute diced tomatoes)
3/4 c. water
1 3/4 c. uncooked instant rice
1 Bag (16 ounce) Broccoli, corn, and red pepper (sub. 1/3 bag broccoli, 1/3 bag pepper stir fry mix, 1/3 bag corn OR 1/2 bag broccoli and 1/2 bag pepper stir fry mix: I normally just put in whatever looks good, I've learned to not measure veggies much!)
Dash Tabasco Pepper Sauce to taste (I don't use it b/c I don't keep it around)
Heat Sausage in Large skillet 2-3 minutes (just to warm it up a bit)
Add tomatoes, water, rice and tabasco; mix well
Add veggies; mix well.
Cover and cook over medium heat 5-7 min. or until rice is tender and veggies are heated through. (Sometimes it takes a little longer to get completely heated through, it could depend on your stovetop)
I like this recipe because it's quick and easy (hence the name of the cookbook). I can do it all while Peter eats his dinner (he doesn't like when the kitchen takes me away from him)! These are easy ingredients and most I always have around because they are used in other recipes I like! Tune in next week for more recipes on MEAL OF THE WEEK MONDAY!
