Seth is Dairy Free (DF) and Egg Free (EF) due to allergies; he still loves his meat! Therefore, since there is no other term I can find to describe him, I call him a Meat Eating Vegan!
Being DF and EF is...hard. Most recipes I made before he knew this info were full of cheesy, milky goodness! We've tried to redo them with the cheese substitutes but Seth knew the difference and thought they tasted way to fake and would rather go without. He really likes Vanilla flavored Almond Milk for cereal and I use Original Almond Milk for baking.
It's been a long road in the cooking department and I still find myself in meal ruts quite often. He's a meat and potatoes kind of guy and that's always a good go-to meal, but it get's old...fast!
At least I have learned to make some great breads, muffins, and even cupcakes!
Thanks to my Sister-in-Law Brooke, a new recipe is a go-to for family birthday cakes! You can make a 9x13 cake with only a box of Duncan Hines Cake Mix (b/c it has no milk or egg in the powder mix) and a 12 oz. can of pop. We have only tried Yellow cake and Sprite but it is delicious! Can't wait to experiment with more flavors!
